Hello and welcome to my story. 

I started Keto in August 2017 together with my daughter Shona. We spoke to Rachelle about this WOE and it did help us make the decision to give it a go.   

I am a type 2 diabetic and when I started this WOE I was injecting 80 units of insulin a day as well as taking tablets. With my GP's approval and knowledge that I was eating a ketogenic diet I weened myself down to 8 units a day at which time my GP said to stop altogether.

I am currently completely OFF insulin injections. I will, over the coming months, be reducing my diabetic tablets one at a time. I am taking 5 a day at the moment. During this time I have lost 12kgs.  My weight loss has not been fast, actually quite slow, but my doctor assured me that this is the best way to lose weight.

I do not have sugar in my coffee and from the beginning I substituted sugar in my baking with Sukrin products. I especially love the gold fibre syrup on pancakes. I really enjoy the flavour of the Sukrin products and don’t feel like I am missing out on sweet treats!

I don't really have a particular favourite recipe as I try to make something new when I bake.  Here are a few that I have made.  I've made Raw Snikkers Slice (Mad Creations), Cheesecake Brownies (gnom-gnom.com - substituting the Xylitol for Sukrin), Somoas Cookie Bars (joyfilled eats.com) and Kristie Sullivan's Pound Cake.  There are so many lovely things to try but I must say I would make the Snikkers Slice again so that is probably my favourite.
